Phantom's Way

This 2022 Chenin Blanc from our northerly friends in the Columbia Gorge AVA is a study in balance and harmony. It underwent fermentation in a combination of new and neutral Damy French oak barrels. We kept some of the residual sugar and only allowed partial malolactic fermentation so that the wine shows perfect form. It has fresh mint and thistle aromatics atop a succulent palate with kiwi and honeydew fruit. It's the perfect pairing with spicy and/or sweet food and is revitalizing on its own.
